Gooey Goddess Brownies

This recipe makes the most delicious soft brownies, it’s hard to imagine trying anything else. Some tips to encourage a gooey turnout: melt the butter so it’s hot and creates the crackly tops, whisk butter and sugar really well, beet the eggs for a full minute, and avoid getting air in your batter by not over mixing/beating your your batter once the flour and cocoa powder are added, and lastly, don’t over bake them and use the top of the oven as opposed to the middle. A final tip, we make our own cocoa powder mix by using 5 tbsp dutch cocoa powder and 3 tbsp dark cocoa powder and add a touch of salt and caramel at the end.

Ingredients

  • 1/2 cup unsalted butter, melted and HOT

  • 1 tablespoon cooking oil, (olive oil or coconut oil is my preference)

  • 1 1/8 cup sugar

  • 2 large eggs (we use duck eggs)

  • 2 teaspoons pure vanilla extract

  • 1/2 cup all purpose (or plain) flour

  • 1/2 cup unsweetened cocoa powder (see my notes above)

  • 1/4 teaspoon salt plus a pinch

  • 2oz Goat Milk Caramel

Directions

  • Preheat oven to 350°F

  • Lightly grease an 8-inch square baking pan with cooking oil spray(optional: line with parchment paper or baking paper); set aside.

  • Combine hot melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in color (another minute).

  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).

  • Pour batter into prepared pan, smoothing the top out evenly.

  • Drizzle Goat Milk Caramel Sauce on top in a zigzag and add a punch of salt.

  • Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch (the brownies will keep baking once they’re out). A toothpick should come out dirty for fudge-textured brownies.

  • Remove and allow to cool to room temperature before slicing into 16 brownies.
